Does agave syrup go bad?

Agave syrup has an exceptionally long shelf life, but it can eventually degrade or spoil if stored improperly. Due to its high concentration of natural sugars and low water content, unopened agave syrup can last 2 to 4 years in a cool, dark pantry past its printed date.

Once opened, agave syrup stays fresh in the pantry for up to two years. It does not require refrigeration. However, exposure to moisture, heat, or food contaminants can cause issues. Signs that agave syrup has spoiled include mold growth around the cap, a sour or fermented smell, cloudiness, or a noticeable off flavor.
