Does almond butter need to be refrigerated?
Almond butter does not strictly require refrigeration, but chilling it significantly extends its shelf life and prevents oil separation. Commercial almond butters containing added oils or stabilizers can sit in a cool pantry for months after opening without spoiling. However, natural almond butter—made with only almonds and salt—naturally separates into solid nut butter and floating oil at room temperature.
Refrigerating natural almond butter after stirring slows down fat oxidation, preventing rancidity and keeping the product fresh for up to six months. Refrigeration also firms up the texture, making it less runny. If you prefer easy spreading at room temperature, keep a small jar in your pantry for immediate use while storing larger reserves in the refrigerator.
