How to cut jackfruit?

Cutting a whole fresh jackfruit requires careful preparation because the fruit releases a sticky natural latex sap. Start by laying down newspaper or parchment paper and coating your chef’s knife, cutting board, and hands generously with vegetable oil or coconut oil to prevent the sticky sap from adhering to your tools.

Slice the jackfruit in half lengthwise, then cut those halves into manageable crosswise quarters. Wipe away any sap that leaks out using paper towels. Cut out the central white core running down the middle of each piece. Once the core is removed, use your fingers or a paring knife to extract the yellow fruit pods from the surrounding fibrous strings. Peel away the skin from each pod and pop out the inner seed before eating or cooking.
