What is blue agave?

Blue agave (Agave tequilana) is a succulent plant native to the arid regions of Mexico, particularly Jalisco. It features long, spiky blue-green leaves and a large, bulbous core called a piña, which is rich in complex carbohydrates called fructans.

Blue agave is famously the sole plant used to produce authentic tequila. Additionally, the sap extracted from the piña is processed to create blue agave nectar (syrup), a sweet liquid popular as a vegan sweetener. Blue agave inulin, a soluble prebiotic fiber powder, is also extracted from the plant to support gut digestive health.
