What is tapioca syrup?
Tapioca syrup is a natural liquid sweetener produced from the starch of the cassava root (tapioca). To manufacture the syrup, cassava starch undergoes enzymatic hydrolysis, breaking complex carbohydrates down into simpler sugars like glucose and maltose.
It serves as a popular plant-based alternative to high-fructose corn syrup, honey, and refined sugar. Tapioca syrup is clear, neutral in flavor, and provides a smooth texture, making it common in commercial organic foods, protein bars, fruit snacks, and vegan confectionery. It has a slightly lower glycemic index than pure white sugar, but still functions metabolically as a fast-digesting carbohydrate sweetener.
